Chicken Pot Pie

Every once and a while one of my kitchen experiments goes better than expected.  This is nothing too fancy but was delicious.  It was also very easy and cheap.  (Prep and cook time ~ 1.5h)

  • 3 boneless, skinless chicken breasts
  • 1 can no/low sodium cut green beans
  • 1 can chopped carrots
  • 1 can no/low sodium corn
  • 1 can cream of broccoli
  • 2 cups skim milk
  • 2 cloves garlic
  • season salt, paprika, thyme
  • 1 tube flakey biscuits

Boil chicken in salted water until cooked through. Empty pot and allow chicken to cook. Place some olive oil in pan and add garlic.  Drain veggie cans and add to pot.  Add enough water to boil veggies.  While the veggies cook, shred the chicken and put into 9x12 pyrex add veggies. Add salt, paprika, thyme. Mix soup and milk in pan and heat if needed to mix.  Pour over veggies and chicken. Flatten and spread biscuits over the top and place in an oven on 400 for 30 minutes.
